HOMINY BLACK BEAN SALAD



A colorful dish that is tasty and packed with vitamins, minerals and fiber! A great addition to taco night, sandwich night or a summer meal. Make extra to enjoy later and make putting together a healthy meal quick and easy!



Ingredients:

1 15 oz can ea. Black beans and hominy/ drained and rinsed

1 minced jalapeno, seeds out

1/2 cup chopped cilantro

1/2 cup chopped red onion

3 cloves garlic, minced

2 diced yellow mini peppers

2 diced roma tomatoes

1 tsp. Cumin and coriander

1 7oz can salsa verde

1 avocado


Combine the first 9 ingredients, add salsa verde and mix to coat.

Garnish with diced avocado and ENJOY! .
